These knives were the result of a joint effort between Wear-Ever's parent company (Alcoa Aluminum) and Case. Wear-Ever wanted to develop a high-quality line of professional cutlery, so they decided to approach Case, as they were fairly close geographically and were viewed as one of leaders in the U.S. cutlery industry. This joint effort resulted in ALCAS, Alcoa=AL + Case= CAS. At any rate, they are outstanding knives that are very well made and very well designed. They offer top-notch performance and quality that allows them to easily face the rigors of a commercial kitchen. While the Cutco knives were designed for household use and marketed as such, these knives were designed for the professional and were marketed to commercial establishments and professional chefs.
After years I've trying to sort out the history of these knives, I'm certain that whether these knives are wearing the Case, ALCAS, or Wear-Ever brand, at least the blades were all made in the same factory. It was either the Case factory or the Cutco factory, although I believe it was Case simply due to their extensive kitchen cutlery line and capabilities.
The knife has sen light use and it remains in very nice condition with no problems at all. It has not been cleaned or buffed and remains original. The knife has been well cared for over the years and shows no signs of abuse or rough treatment.
This is a beautiful, well-made knife that will offer excellent performance to compliment its fine quality. The long, deep, and sturdy blade was ground from carbon steel and it's free of any significant corrosion or pitting with just some scattered small spots of the usual fine surface peppering as shown. The blade is very stout and offers no flexibility. The blade finish is free of errant grinder marks or harsh sharpening abrasions with just a few faint, hairline sharpening abrasions as shown. It has been lightly and carefully sharpened with almost no sharpening loss. The etched markings remain fully visible, although they are difficult to see in the photos due to flash reflection and patina. The blade hasn't actually even developed a full patina with areas of the original deeply mirrored finish still visible. The edge is free of any nicks, chips, dings, or damage and remains very nice with just a bit of normal light wear. It remains somewhat sharp and the knife is ready for immediate use, although a quick touch-up will have it razor sharp in no time. Large knives designed for commercial use are very frequently found with numerous dings and dents to the spine from use as an impromptu hammer for tapping pans, pots, cans, etc. The spine on this knife is completely free of any dings, dents, marring, or damage. The needle-sharp tip is intact and original with no blunting, burrs, or bending. The handle is of a beautifully grained hardwood and it remains rock-solid. The thick scales were tightly pinned and they're free of any cracks, chips, gouges, or damage with very little wear. The wood is completely free of the dishwasher fade/bleaching that's so common to wood handles. It also shows no water exposure damage from normal sink washing. The handle is free of any stains or discoloration. The wood remains dark and rich with even color on both sides. The handle has a warm, silky-smooth feel in the hand. It's akin to an old, trusty handrail that's been mellowed by tine and untold hands.
The knife measures 15-1/4" in overall length.
